The Woody diet, an evening meal

Pork medallions and apple sauce with Mediterranean style roasted vegetable and cabbage.

Meat and vegetables roasted with just a light spray of rapeseed oil and cabbage cooked in unsalted water.

Total calories were 497 as I had used less than my allowance for my breakfast and lunch I could treat myself to 2 medallions however if needed I could save 168 calories by having just one medallion.

I am quite enjoying the roasted vegetables it seems to give them a stronger flavour that cooking them in water.

The apple sauce was 39 calories so again if I wanted I could lose that but TBH I really like apple with pork.
